- 3 large eggs
- 1 cup rolled oats (can use quick oats)
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1 tablespoon honey or maple syrup (optional, adjust for sweetness)
- 1 teaspoon vanilla extract
- 1 pinch salt

Instructions
- Gather all the ingredients in a large bowl. Make sure the cottage cheese is well-drained.
- Add the cottage cheese, eggs, oats, baking powder, cinnamon, honey or maple syrup, vanilla extract, and a pinch of salt to the bowl. Mix everything thoroughly until you have a homogeneous mixture.
- Heat a non-stick skillet over medium heat and lightly spray it with cooking spray or add a little oil or butter.
- Use a ladle to pour a portion of the batter into the skillet. Let them cook for about 3-4 minutes until bubbles form on the surface.
- Carefully flip the pancakes with a spatula and cook on the other side for another 2-3 minutes until golden brown.
- Repeat this process with the remaining batter until all pancakes are done.
- Serve the pancakes warm with your favorite toppings, such as fresh fruits or yogurt.
